Sip of Lobster Soup Recipe


  • 1 Lobster (Meat removed, use for different purpose; Shells only and body)
  • Olive Oil
  • Salt, to taste
  • 1 onion, sliced thin
  • 1 Fennel, sliced thin
  • 1 head garlic
  • 2 Sprigs Tarragon
  • 2 cups 1/2 and 1/2
  • 2 cups blood orange juice
  • White Pepper


  1. In a pan with a lot of surface area, add oil, sweat onions and fennel until translucent, about ten minutes, adding 1/2 teaspoon of salt.
  2. Add Lobster shells and tarragon, and cook over low heat about ten minutes, releasing more flavor.
  3. Add 1/2 and 1/2, and reduce by half.
  4. Add blood orange juice, reduce by half.
  5. Strain, taste. Adjust seasoning, crack white pepper.
  6. Serve warm!
