Sip of Lobster Soup Recipe

Sip of Lobster Soup Recipe
Ingredients
- 1 Lobster (Meat removed, use for different purpose; Shells only and body)
- Olive Oil
- Salt, to taste
- 1 onion, sliced thin
- 1 Fennel, sliced thin
- 1 head garlic
- 2 Sprigs Tarragon
- 2 cups 1/2 and 1/2
- 2 cups blood orange juice
- White Pepper
Instructions
- In a pan with a lot of surface area, add oil, sweat onions and fennel until translucent, about ten minutes, adding 1/2 teaspoon of salt.
- Add Lobster shells and tarragon, and cook over low heat about ten minutes, releasing more flavor.
- Add 1/2 and 1/2, and reduce by half.
- Add blood orange juice, reduce by half.
- Strain, taste. Adjust seasoning, crack white pepper.
- Serve warm!
